Let's get something to eat! Student proposals for transforming academic catering at Jagiellonian University campuses
The aim of the following project is to identify the needs of the academic community and to propose directions for the eventual transformation of the Jagiellonian University’s academic food system related to sustainable development, climate change, health and economic affordability. In particular, we are focusing on the students and their perspective on the food system, as the largest group within the university community.
The main activity within the project will be three co-creation workshops, conducted using the LEGO SERIOUS PLAY® methodology. Participants, based on the current scientific knowledge and their own experiences of studying at the Jagiellonian University, will be asked for developing a vision for the transformation of the food system by identifying key solutions that address the daily needs. To map the diverse challenges, the workshops will take place at three Jagiellonian University “campuses”: within the Old Town; in the vicinity of Krupnicza St. and Trzech Wieszczów Ave.; and at the Campus III – the 600th Anniversary of the Jagiellonian University Revival.
To make sure the results are developed to be as applicable as possible, the project team will consult with expert organisations and undertake study visits to academic institutions that lead the sustainable food transformations. Combining these elements will help to develop conclusions and recommendations, which will then be used during workshops with decision-makers to be held in autumn 2026 (carried out as part of the project ‘Diagnosis of academic food systems in Poland, together with a proposal for their transformation’, commissioned by the Minister of Science and Higher Education). As a result, the students’ perspective will be incorporated into further analyses concerning the development of sustainable food systems at universities in Poland.
